Blackstone Griddle Holiday Hors d’Oeuvres Fried Mac and Cheese Bites

Prepare to delight your guests with delicious fried mac and cheese bites prepared on your Blackstone griddle this festive season! Easy, quick, and tasty, these will surely be a new holiday favourite!

Ingredients:

  • 2 cups cooked macaroni pasta
  • 1-1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup all-purpose flour (for dredging)
  • 1-1/2 cups breadcrumbs (preferably Panko for extra crunch)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • Cooking oil (vegetable or canola) for frying

Step 1: Prepare the Mac and Cheese

  • Cook the macaroni pasta according to package instructions. Drain and set aside.
  • In a saucepan, melt about 2 tablespoons of butter over medium heat. Add 1-1/2 cups shredded cheddar cheese and 1/2 cup grated Parmesan cheese. Stir until melted and smooth.
  • Combine the cooked macaroni with the melted cheese mixture. Stir in 1 egg for binding, and add salt, pepper, garlic powder, and onion powder. Mix everything well and let the mixture cool down (it should be thick and sticky). If the mixture is too loose, you can add more cheese or let it chill for a while in the fridge to firm up

Step 2: Form the Bites

  • Once the mac and cheese has cooled slightly, form small bite-sized balls (About 1-1.5 inches in diameter). If the mixture is too sticky, lightly flour your hands.

Step 3: Bread the Bites

  • Set up a breading station with three shallow bowls: one with flour, one with a beaten egg, and one with breadcrumbs.
  • Dip each mac and cheese ball into the flour, coating it evenly, then dip it into the beaten egg, and finally coat it in breadcrumbs. Repeat with all the balls.

Step 4: Preheat the Blackstone Griddle

  • Preheat your Blackstone griddle to medium-high heat. Once hot, drizzle or spray with oil (about 2 - 3 tablespoons), covering the surface evenly.

Step 5: Fry the Bites

  • Carefully place the breaded mac and cheese balls on the griddle. You can flatten them slightly if you prefer more of a “bite” than a ball shape.
  • Cook for 2 - 3 minutes on each side, or until golden brown and crispy. Use a spatula to flip the bites gently, making sure all sides are evenly browned.

Step 6: Serve

  • Once the Mac and cheese bites are golden and crispy, remove them from the griddle and drain excess oil on a paper towel.
  • Serve hot with your favourite dipping sauces, like marinara, ranch, or hot sauce and enjoy!
